Kombdi Vade is a yummy delicious dish famous in Sindhudurg. Specially prepared for occasions or after marriage rituals. Kombdi Vade is basically a puri served with chicken. Also known as “Vade Sagoti” or “Malvani Vade”. Vade is puri and Sagoti meaning chicken prepared in coconut gravy.

Preparations for the Vade Pith:- Rice Flour, Urad Dal, Wheat Flour, Jowar Flour, Fenugreek Seeds 1 tbsp, Coriander Seeds 2 tbsp, Ajwain Seeds 1 tbsp, Jeera 1 tbsp, Turmeric, Salt. Proportion:- Rice, Wheat Flour, Jowar Flour = 2:1:1, Urad Dal as per choice only to make it sticky. Fry the above ingredients till they turn brown except for turmeric and salt. Grind the flour with the above ingredients and knead it in a dough with hot water. Keep this aside to set for 1 to 2 hours. To prepare rice flour, rinse the rice in water and allow it to dry on a cotton cloth. Add turmeric and salt according to taste and color. The magical ingredient is coriander seeds, the fragrance is amazing.

Making of Kombdi Vade:- On a banana leaf or any plastic (available at home reuse the packaged dry ingredients bag). Grease oil on the banana leaf and palms. With the palm make that desired circle like a puri, this should be medium thick in appearance. Thin vade will turn crispy so please be careful. Make a hole in between as we do for Medu Wada, this is optional.

Kombdi Vade

Take a Kadai and add enough oil to fry the Kombdi Vade, prefer hot oil. They look brown outside and slight yellow in color from the inside. The best part of these vade are they require less oil and no additional oil is required to pour.

Kombdi Vade tastes best with Sagoti – Chicken Delicacy, any Usal like Green Peas, Chickpeas, Beans, etc. Basically any coconut gravy based vegetable. They taste best with tea for breakfast.
