I love cauliflower but hate its pungent smell. I usually fry it and then make a sabzi, so this recipe was a surprise for me. Of course, I always soak it in salt water and clean it thoroughly before frying, but I usually avoid boiling it. I just went with the flow and followed Shivesh’s recipe.
He used spaghetti, but I had penne at home, so I used that instead. I tweaked the recipe a little.

Ingredients
- Penne Pasta
- Cauliflower
- Red Chilli Flakes
- Mixed Herbs
- Milk
- Cheese (optional)
Method
Clean and boil a whole medium-sized cauliflower. Separately, boil pasta in water with a little oil and salt, then set it aside to cool. Blend the boiled cauliflower with a small amount of milk until smooth. In a pan, heat some oil and butter, then add chilli flakes and mixed herbs. Add the cauliflower mixture and stir well. If you enjoy cheese, add a slice at this stage; otherwise, you can skip it. Stir everything together thoroughly and serve hot.
I served this dish to my daughter and husband – neither of them could guess or smell that cauliflower was the main ingredient! I was pleasantly surprised—it tasted much better than I had expected. I honestly didn’t have high hopes, but the Creamy Cauliflower Pasta turned out to be worth a try.
