Hola Readers ๐ Monsoon is already struck Sindhudurg and Goa โ๐๐ง๐ Officially it is the scariest season for me as it rains cats and dogs here unlike the monsoon in Pune. Initial days it was awful, the unpredictable thunder, lightning and the electricity cut off. I am slowly getting used to this season and environment.
If you are the one who’s planning to visit Konkan or Goa these days please note this is an off-season so plan accordingly. Anyways let’s head to our main topic which food ๐ Ummm… Sshhh I have a monsoon special Brinjal Recipe today…
My Prawns Malvani Curry was a hit, but many of them were the vegetarian’s so this simple Brinjal recipe is for you all.๐๐ย .
Brinjal is the most important vegetable loaded with vitamins and nutrients. Brinjal Recipes differ from each state and country and each of this stands out in the crowd. By now you have already made it out Brinjal is my favorite and Nitin’s too.
Ingredients:-
- Brinjals (Eggplant)
- Onion
- Suhana Garam Masalaย
- Red Chilly Powder
- Turmeric
- Any homemade masala
- Groundnuts
- Sesame Seeds
- Grated fresh or dry Coconut
- Gingerย
- Garlic (if you are a Jain can ignore this but this adds flavor)ย
- Green chilly
- Mustard Seedsย
- Coriander
- Oil
- Salt as per taste
Preparation:- Roughly crush ginger, garlic, and green chilly
Fry some groundnuts, sesame seeds, and grated coconut. Grind this into a fine mixture.
Procedure:- Take a small 5ltr pressure cooker for this recipe. Add some oil (if you can add generous amount as it gives a nice layer to this dish). Mustard seeds for tempering (tadka), chopped onions(can ignore it too), crushed ginger-garlic-chilly paste. Let it turn slightly brown. Cut the brinjal into 2 pieces(remove the green stem which is spiny stem, many ppl keep this too) add groundnuts mixture and press the ends. Don’t cut the brinjal till the end else filling will come out (the filing comes off and adds a unique taste to the brinjal).
Add some turmeric, red chilly powder, and Suhana Garam Masala. It’s time to add the stuffed brinjals to the cooked onions and ginger paste. If theย groundnuts mixture remains too add it. Salt as per taste. Water as per requirement and desired thickness ๐ Cover it with a lid and let it cook till 2 whistles. Serve it with coriander and have it with Jowar or Rice Bhakri.ย P.s. Not me, but my family is a big eggplant eater. We call these Vaghare Baingan and my mother-in-law makes these very often. Thanks for the recipe. Just one question, is suhana garam masala is a type of garam masala?
